First Course:

Asparagus- green peppercorn sabayon, sieved egg, bottarga, sour dough crouton Roasted Cauliflower- cacio e pepe style, pecorino, black garlic, prosecco cured egg yolk

Porcini Mousse- benne cracker, rhubarb jam, grappa Robiola Espuma- pickled green strawberry, speck, almond

Second Course:

Crispy Chicken Thigh- baby spring crudite, Manakintowne greens, green almond, jus

Rockfish- Salt potato, charred ramp relish, green garlic, sea bean

Rabbit Cannelloni- morels, pickled spruce tips, sorrel, grain mustard veloute Rigatoni White Bolognese- veal, pink peppercorn, pecorino

Artichoke Pappardelle- Fava, lemon, mascarpone

Third Course:

Chocolate Budino- whipped lemon curd, D.O.P. Frantoi Cutrera EVO, fleur de sel Carrot Cake- anise hyssop meringue, carrot puree, pickled raisin

Strawberry Mousse- lemon balm sponge, white chocolate, cardamom

Rhubarb Semifreddo- almond biscuit, pistachio
