Sun-dried Tomato Pesto

2 cloves garlic

1 cup oil-packed sun-dried tomatoes, drained

4 tablespoons lemon juice

½ cup grated Parmesan cheese

¼ cup pine nuts

¼ cup extra-virgin olive oil

Freshly ground black pepper

In the bowl of a food processor, add garlic, sun-dried tomatoes, lemon juice, Parmesan cheese, pine nuts, olive oil and pepper. Process until smooth.

Try on grilled chicken or steak.
